Ayrshire cattle originate from Ayr County in Scotland and are one of the world's major dairy breeds. They occupy an intermediate position between Jerseys (small, high solids) and Holsteins (large, high volume) — producing moderate volumes of well-balanced milk.

Ayrshire milk has an ideal fat-to-protein ratio with naturally homogenised fat globules — making it particularly valuable for artisan cheese and butter production. Ayrshire cows are hardy, long-lived, and adapt well to a variety of climates.

Their moderate size reduces the heat load compared to Holsteins, making them a practical dairy choice for warmer climates. They are feed-efficient and show good fertility under challenging conditions.
