Dormer sheep were developed at the Elsenburg Agricultural College in the Western Cape, South Africa in the 1940s by crossing Dorset Horn rams with South African Merino ewes. The name combines 'Dorset' and 'Merino.'

Dormer sheep represent a deliberate compromise between meat and wool production: they grow faster and produce better-conformed carcasses than pure Merino, while producing finer wool than Dorset Horn. They are early-maturing, with lambs reaching slaughter weight (36–40 kg) in 90–100 days under good conditions.

Dormer ewes are good mothers with adequate milk production for single and twin lambs. They are particularly popular in the Western Cape grain belt where lambs can be finished on crop residues.
