Merino sheep are universally regarded as the world's finest wool-producing breed, capable of producing wool so fine it can be used in luxury garments worn directly against the skin without irritation. South African Merino has been developed from imported Spanish Merino stock crossed with Australian Merino genetics to produce animals perfectly adapted to the South African highveld.

Merino wool is classified by micron count — the average diameter of the fibre. Ultra-fine Merino (16–18 micron) commands extraordinary prices in luxury fashion, while standard Merino (19–23 micron) is the backbone of the wool textile industry. South African Merino typically produces 4–8 kg of clean fleece per year.

Beyond wool, South African Merino also contribute to mutton production, particularly in the Karoo where their meat develops a distinctive flavour from the aromatic Karoo scrub.
